My husband isn’t a huge fan of sweets, but when I first met him, the only thing in his refrigerator was a coconut pie that his grandmother had made for him. Needless to say, I knew I had to find the perfect recipe! So I called my Uncle David to see if he could help me out. The next words that came out of his mouth was music to my ears. He said, “Not only do I have a great recipe, it will make exactly ONE pie!”
That was great news because I’m from the south and normally most recipes will feed a village and I didn’t want to be wasteful. I love this recipe because it’s simple, delicious, and fool proof. Here are the ingredients you will need:
(1) 9 inch frozen deep dish pie crust
¼ cup butter (room temperature)
1 cup sugar
2 eggs
2 tbs all purpose flour
½ cup milk
¼ tsp almond extract
2 cups grated coconut
First, you have to prepare your pie crust. I use a fork to poke holes in the crust, then I put it in a 200 degree oven for about 15-20 minutes in order for the crust to dry out. This prevents the crust from becoming soggy once it’s baked with the filling.
I also add a little flour to the crust once it comes out of the oven. This helps to ensure the flakiness of the pie crust.
Directions for the filling:
Preheat oven to 350 degrees Fahrenheit
Cream the butter and sugar together
Add the remaining ingredients: eggs, flour, milk, almond extract, coconut
Mix well and pour into prepared pie crust
Bake for 45-5o minutes
Allow to cool, slice, and enjoy!

Thanks Stephanie, You don’t know me but your pie looks so yummy I am going out tomorrow for the ingredients to bake one. I am the one who doesn’t like coconut custard pie. But I like the fact that this is deep dish. I’ll let you know how it turns out.
